The first menu shows a painting of the Empress of Japan. Launched in 1930, the Empress served the Pacific trade until 1939, when CP withdrew it from service due to growing tensions in Asia. After the war began, the ship was renamed the Empress of Scotland and used as a troop carrier. Having survived the war, it returned to CP service until 1957.
