In the mid-1950s, someone at the Burlington Route decided that all Zephyr menus should follow a single brand standard. This standard dispensed with beautiful cover photos of trains or scenery and enticing descriptions of places to go by train on the back. Instead, it had the initials of the train on a vertical bar and the full name of the train in script written horizontally.

Though plain in design, the menus were printed on high-quality sheets of paper 14 inches wide by 21 inches tall, then folded in half horizontally, then folded vertically. This used more paper but made it possible to print the menu on one side only.

We’ve seen menus like this before for the California Zephyr. One is dated 1955 and printed in blue ink in a landscape format, while the other two are dated 1957 and, like this one, are in a vertical format though one has green ink and the other brown.

This Nebraska Zephyr is dated March, 1956, and offers a nice selection of table d’hôte and a la carte lunches. I’ve seen others in this style dated as late as 1965.
