Dated three days after yesterday’s menu, the photo on the cover of this one is even drabber, mainly because of Southeast Alaska’a typically cloudy skies. While the photograph may be more honest than the paintings CN used in the 1950s, it is less attractive. The back cover of the menu has a photo of the lighthouse at Peggy’s Cove, and it at least has a little blue sky.

Passengers on April 30, 1963 had a choice of Mexican omelette, calf’s liver and bacon, stuffed pork chop, prime rib, or roast chicken. Red salmon was also on the menu, though I’m still not clear if it is an entrée or another appetizer. Desserts include lemon snow pudding, fans au fraise (strawberries), and several more.
Music accompanying dinner included Mantovani waltzes, “easy listening” songs from Frank Chacksfield, Chet Atkins on his guitar, and Hawaiian strings, among others. All of them are labeled “part two,” suggesting this was the second night out on either a north- or southbound journey.
