University of Kansas 1951 Dinner Menu

The last menu I have for the Michigan Wolverine Club is a dinner menu dated January 6. The Los Angeles Limited would serve another breakfast and a lunch, before arriving in Chicago, presumably on January 7. This menu cover features the administration building for the University of Kansas, which was completed in 1923 and later named for Frank Strong, who was university chancellor from 1902 to 1920.

As with the lunch menus, the a la carte side of this menu is identical to the dinner menu of the night before. In fact, the a la carte dinner menus are identical to the a la carte lunch menus. The entrées on the table d’hôte side differ from the previous day’s dinner, this one featuring salmon, chicken fricasee, and prime rib rather than sea bass, pork chops, and turkey.

Including this menu, I’ve now filled in most of the missing menus from this series, though I’ve also discovered another one that I don’t have for the University of Southern California, as shown above. With that USC menu, I’ve now identified four menus for California universities, two each for Colorado, Kansas, Utah, and Washington colleges, and one each for schools in Idaho, Montana, Nebraska, and Wyoming. It seems likely that there is at least one more for Idaho and Nebraska and there should be two for Oregon and one or two for Nevada.
