A few days ago we had some menus from the 1950 Sam Campbell Western Wonderlands tour. This menu is from the 1949 tour, which was the second such tour offered.

According to the first Sam Campbell Special newsletter, the 1949 tour visited Bryce, Zion, and the Grand Canyon, then went to Sun Valley, and finally Lake Louise and Banff via Portland and Vancouver. While at Sun Valley, the 175 members of the party learned to dance the Hokie Pokie (as it was spelled in the newsletter). According to Wikipedia, versions of this song date back at least as far as 1826, when it was called Hinkumbooby Round About. It was popularized as the Hokey Pokey by the Sun Valley Trio, who first recorded the song in 1948.
The cover of this menu shows the 4-2-0 Pioneer, one of Baldwin’s earliest locomotives. It was built for a predecessor of the New York Central, which sold it to the Galena and Chicago Union, the oldest predecessor of the Chicago & North Western. It was also used for a time by the Chicago, Burlington & Quincy. It survives on display at the Chicago History Museum.
