Here’s a dinner menu dated the same day as yesterday’s lunch menu. From the listings, it’s hard to tell lunch and dinner apart as they both have nice entrées (though the lunch menu has two more than dinner) with lots of side dishes. Whitefish, lamb, beef, veal, and turkey are among the entrées.

Comparing these menus with those for Canadian Pacific hotels in the Rockies, the main difference is the CP menus were priced, indicating the hotels were mainly on the European plan. The table d’hôte menus are similar but the CP menus also offered an extensive a la carte section that is missing from the CN menus, which is typical for American plan menus.
