Veranda View 1940 Lunch Menu

This lunch menu is dated one day after yesterday’s and has a completely different selection of entrées and side dishes. Among the nine entrées are salmon steak, chicken pot pie, and calf’s head garni Parisienne, which I can’t imagine what it looks like or why anyone would want to eat it.

The photo shows the “view from the veranda, main building.” Unlike the Banff Springs Hotel or Chateau Lake Louise, which had everything in one building, the Jasper Park Lodge consisted of separate cabins surrounding the main lodge that had the lobby and dining room.
