Lucin Cutoff Supper Menu

The photo shows a spectacular aerial view of the westbound Overland Limited traversing the Great Salt Lake. Airplanes were still rare enough in 1938 that few people would have ever seen such a view. The Overland left Ogden at 8:20 am in 1938, so this photo was probably taken an hour or so later in the morning.

This supper menu offers a choice of salmon with sauce anglaise, chicken pot pie, or club steak, which is half of a t-bone steak. Personally, I would prefer the salmon, but all the recipes I find for creme anglaise are more for sweet desserts than for fish.
