Breakfast on the Los Angeles Limited on January 6, 1951, featured this menu showing the University of Nebraska’s ivy-covered administration building. Like menus from the previous two days, this one is imprinted for members of the Wolverine Club returning home after the 1951 Rose Bowl.

Though breakfast cannot have been a major money maker for the Union Pacific, this menu shows that it stocked its dining cars with eleven cereals, a similar number of juices and fruits, and a variety of entrées including salt mackerel, fish, lamb chops, ham, bacon, sausage, and of course eggs.
