CP 1940 Banff Springs Menu

We’ve seen this photograph before on a post-war menu. Here it is on a menu dated August 7, 1940; for the Americans who went on the American Express Banner tour for which this menu was used, this was a pre-war time, but Canada had entered the war in 1939.

This is a breakfast menu that offers halibut, cod, griddle cakes, ham, bacon, or eggs (not bacon and eggs). These are served with fruit or juice, cereal, potatoes, bread, and coffee, tea, or milk. The menu cover is slightly different from the 1946 one in that “Banff Springs Hotel” is in script instead of more traditional typeface.
