150 Apple Recipes

Published in 1925, this 40-page booklet makes some outlandish claims about the health benefits of apples, stating they make good mouthwash as well as toothpaste and that they “play an active and important part in the elimination of poisonous materials.” The booklet rates 23 varieties of apples grown in the Pacific Northwest for both eating and cooking.

The 150 recipes include more than a dozen jellies and jams, a dozen pies, eight puddings, and at least six varieties of baked apples. A couple of the recipes call for “a cup of homemade yeast,” which as near as I can tell refers to something like sourdough starter. Most of the other recipes, however, can be made with ingredients found on anyone’s cooking shelves today.
