More College Menus

Until recently, I haven’t seen any college menus used on UP trains dated after 1952. But yesterday’s Midland College menu was dated January, 1953, and todays are even later in 1953. We’ve seen both of these covers before but with different interior menus.

For breakfast, we have a June, 1953 menu with Washington State College on the cover. Like the December, 1952 Washington State College menu we’ve seen before, this one devotes half the interior space to bragging about the dining car’s “budget prices,” which only leaves room for three table d’hôte breakfasts and a few a la carte items. Midland College Dinner Menu

Dated January, 1953, this menu highlights the fifth college in Nebraska to be featured on the cover of a UP menu. Most other states that were served by UP in the early 1950s only had one or two colleges on dining-car menu covers; only California had more than two, with four so far known to exist. But this made sense because California’s 1950 population was nearly equal to the population of the other ten states combined. Nebraska doesn’t have many scenic views to feature on menu covers, but neither does Kansas and it (as far as we know) only had two college menus.

This is the fourth college menu featuring a school from Nebraska. Though it has grown to nearly 3,000 students today, with just 400 students in 1952, Doane College (now University) was the smallest college featured on a UP menu.

1951 Boys Town Breakfast Menu

This menu was on my 2015 missing menus list. In fact, judging from some cover stains (which I Photoshopped out for the PDF), this appears to be the very same menu I saw on ebay in 2014. Union Pacific must not have printed many that used this cover photo. Union Pacific is headquartered in Nebraska, but so far we’ve only seen four color photo menus featuring that state: this one plus three colleges.

Union Pacific 1950 Breakfast Menus

Dated May, 1950, these two breakfast menus offer the same seven table d’hôte breakfasts, three plate breakfasts, and numerous a la carte items as the University of Montana menu shown here before. The University of California at Berkeley cover is the same as we’ve seen on a 1951 dinner menu.

Municipal University of Omaha Breakfast Menu

The Municipal University of Omaha was originally a private school run by the Presbyterian Church. In 1930, the city of Omaha took it over, then in 1968 it became a state school known as the University of Nebraska Omaha. According to this menu, it had about 4,000 students in 1949; today it has about 15,500.

French Dinner Menus

In 1937, the City of Portland route was served by the M-10001, a diminutive train that lacked a full-service kitchen. To make a virtue out of necessity, UP claimed that the truncated dinner menu offered on this train consisted of “French cuisine.” In fact, nothing was particularly French about it; crab a la Louie was first served in a San Francisco restaurant, and calling something “tranches au sauman Montpelier” (meaning slices of salmon served with anchovy butter) doesn’t change the fact that the salmon came from the Columbia River, not continental Europe.

The 1939 City of Los Angeles streamliner had a much larger kitchen, yet it still used a similarly small dinner menu with just three entrées. Instead of fillet mignon and breast & thighs of chicken, as on the City of Portland menu, this City of Los Angeles menu had “dinner steak,” sole, and breast of chicken. The Hermitage 1936 Breakfast Menu

This is the first Union Pacific menu I’ve seen in what I call the Moderne series that is not from 1935; though the outside says “Printed in 1935,” the menu inside says “6-16-36.” As near as I can tell, UP began using the Art Nouveau series for most if not all of its trains in the late 1920s. But, perhaps starting with the 1929 inauguration of the Portland Rose, UP designed special menus for each of its premiere trains, with roses on the cover of the Portland Rose, California poppies on the cover of the Los Angeles Limited, columbine on the cover of the Columbine, and so forth.
