Final Empress of France Menus

Here’s an April 30 menu featuring Katy’s Cove, a private beach for guests at the Algonquin, Canadian Pacific’s hotel in St. Andrews-by-the-Sea, New Brunswick. We’ve previously seen a menu with this cover that was used on the Empress of Scotland. So far I haven’t found any menus with this cover used on dining cars or in hotels.

I have barely the faintest idea what some of the items on these menus are. Salade Japonnaise? Potage Egyptian? Ormskirk brawn? One that I recognize that I’ve always loved is salad Nicoise, a combination of lettuce, tuna, hard-boiled egg, potatoes, and a few other things that are usually served side-by-side instead of mixed tougher.

This lunch menu featuring Banff Hotel’s terrace is dated May 1. It offered more than 50 items plus 17 cheeses with crackers. Did everyone who sailed on the Empress of France know what a salade Ivanhoe was? If I ate meat, a Melton Mowbray pie looks good.

Finally, this dinner menu was used on the last night before reaching Liverpool. It seems to have fewer items than some of the earlier menus; I count less than 40. Was that because the kitchens were running out of fresh foods? Or did they no longer feel the need to impress passengers with a wide variety of foods by the end of the journey?
