This menu cover shows Cascade Mountain, a 9,386-foot peak, from the terrace of the Banff Springs Hotel. The menu was used for a luncheon of Alpha Chi Omega, which used to be called a sorority but now elects to call itself a fraternity. The luncheon apparently took place at a June, 1953 convention in the Banff Springs Hotel.

The sparse menu appealed to those conscious of their diets, with appetizers of celery, radishes, and carrot sticks, followed by cream of tomato soup. The main entrée was a fruit plate with cottage cheese. After restraining themselves up to that point, participants could indulge in a hot vanilla souffle drenched in chocolate sauce.
