This menu is dated January 10, less than four months before Amtrak took over, yet it shows the attention to detail and quality that would be expected for what was by then unquestionably the nation’s premiere train. The color cover shows the same Arrow Maker painting that had been in sepia tone on a Texas Chief menu from ten years before.

This menu has not two, not three, but four classes of service. First, on the far right, are a la carte items, including appetizers, salads, desserts, and beverages–but no entrées. On the far left are several meals: calf’s liver; chicken salad sandwich; sirloin steak sandwich; and chef’s salad, all served with rolls, dessert, and beverage.

Fast forward from 1950 to 1970 for a breakfast menu dated October 1. Unlike yesterday’s lunch menu, this one doesn’t skimp on anything: a folder with a color cover (unlike the Texas Chief whose menus seemingly deserved only sepia tones) and an interior menu offering plenty of attractive entrées on both the a la carte and table d’hôte sides.

The cover painting is by Ernest Blumenschein, one of the many Taos artists cultivated by the Santa Fe. Born in Pittsburgh in 1874, he studied art in Cincinnati, New York, and Paris, opening a New York studio in 1896. Here, courtesy of the New York Public Library, are two dinner menus from the Super Chief. Both are dated June 11 (and the library helpfully added that they were from 1946), but they have different offerings.

1965 Santa Fe Lunch Menu

The cover painting on this menu is called Acequia Madre or Deep Shadows and was painted by Theodore Van Soelen, an artist living in Teseque, New Mexico. Born in St. Paul in 1890, Van Soelen suffered from tuberculosis and moved to the arid West for his health in 1916. He sold this painting to the Santa Fe in 1928. The West was apparently good for him as he lived until 1964.

1964 Santa Fe Breakfast Menu

Today will be the first of three Santa Fe menus from the early 1960s. Unlike the Texas Chief menus shown previously, these menus have color covers, but don’t mention the name of a train on the inside. I’ve only seen Texas Chief and Super Chief on menus of this era, so presumably these menus were used on another train such as the Chief or San Francisco Chief.

If, as I speculated a couple of days ago, differences between City of San Francisco and other City train menus in the late 1950s were due to differences between the Southern Pacific and Union Pacific commissaries, those differences did not extend back to 1946. Here, courtesy of the New York Public Library, are 1946 dinner menus from the City of Denver and City of San Francisco.

The menus are about two months separated in time–one is dated January 20 and the other March 18–which may account for the slight design differences. But the items on the menus are very similar. The a la carte sides, for example, are nearly identical, and while there are some differences in the table d’ôte side, they can be accounted for by the usual rotation of meals over time.

California Zephyr 1955 Menu

We’re going back in time, as today’s dinner menu is from January, 1955, as opposed to yesterday’s March, 1957 menu. The two use similar type faces and are about the same size, but are laid out differently: the 1955 one unfolds vertically, while the 1957 menus unfold horizontally.

This menu offers five entrées: trout, veal chop, turkey, leg of lamb, and sirloin steak, each available table d’hôte or (except for the steak) a la carte. Of these, the veal and sirloin steak were on the March, 1957 menu while the trout and leg of lamb were on the April, 1957 menu, suggesting that the railroads had a dozen or so items that they used in rotation.

Here’s a Cal Zephyr menu dated March, 1957. I previously presented a menu dated April, 1957, and despite the small separation in time the two are very different. Both are about the same size and same layout, but the paper used for the two are very different. The March menu is rough and has a deckled edge while the April menu is smooth with straight edges.
