This 1970 menu is decorated with wildflower paintings, the originals of which were mounted and framed in Denver Zephyr bedrooms and compartments. The menu doesn’t say so, but the paintings were done by Kathryn Fligg, a 1951 graduate of the Pennsylvania Academy of Fine Arts, after which she was commissioned to do these paintings by the Paul Crét architecture firm that helped the Budd Company design its trains.

Elsewhere I’ve seen reports that Fligg also did murals in the dome cars of the Twin Zephyrs and California Zephyr. But I corresponded with her in 2012 and she only remembered doing the Kansas City Zephyr, noting that she couldn’t have worked on trains built before 1952.

However, I recently learned that those other trains were redecorated in the 1950s. I located this photograph of a mural from what I believe is a California Zephyr dome car that is clearly signed Fligg. I don’t know if the woman in the photo is Fligg herself or another model, but it is clear she helped beautify a lot of Burlington trains.
